What in the world should this be called????

It was Wednesday night.  I was in a hurry. I had a package of boneless pork chops I needed to use before they went bad.  What happened next was unplanned, unscheduled, nary a recipe followed. It was mostly just a desperation dinner.

As usual, I started with two medium size yellow onions cut into rings. Into my large skillet they went with some canola oil and butter.  I chopped my pork chops into bite size pieces and threw them into the skillet with the onions. I had a large package of white button mushrooms. I wiped the dirt off of them with a damp paper towel and then sliced them.  I put them in the pan with the pork and the onions.

I am stirring it and realizing it is still not enough to feed everyone so I look around for something else to add to the pot.  I smash a few cloves of garlic and toss in. Next, I take out a package of Ore-Ida crinkle cut french fries and start chopping them into smaller pieces.  They get tossed into the pan with the rest of the pork, onions and mushrooms.  I sprinkle in some Soul Seasoning and stir until everything is nice and brown and done.

Was it good? Actually, yes it was. I sprinkled mine with garlic salt and gobbled it up.  Were ALL the family members brave enough to try it? NO.  My husband enjoyed it and so did my son.  I think even Trixie (my "adopted" daughter) ate it.  Not to bad an average.  The only bad side-effect was that I went to church with garlic breath!!

Fresh Butter Beans!

We went to the local Farmer's Market today for something to make for dinner.  It was a hot and busy day with lots of people shopping for fresh produce.  Today's list included Red Delicious apples, russet potatoes, locally grown onions, butter beans,  Vy's Pies , and to see if the quilt lady they advertised about was really my sweet friend Pauline.  I got lucky on so many counts.

Now for the confession:  I do not like Lima beans or butter beans.  Really and truly.  The real reason I picked up the butter beans today was for my daughter Paulina who loves them.  Neither she nor I had ever eaten them fresh.  The amazing revelation is that fresh butter beans taste NOTHING like the canned or dry ones.  They were amazing.  They were so good that my oldest daughter (who never eats anything green) loved them!

It all started with a small bushel of locally grown, fresh butter beans. I dumped them in the strainer and rinsed  well to get off all the little leaves and dirt.
Into the pan they went with just enough water to cover and some salt for flavor. They boiled for thirty minutes.  I drained them and added some butter (you really are not surprised, are you?) and stirred well so the butter melted.

The butter beans were wonderful! Needless to say, there were no leftovers. I am amazed that she and I both loved them.  A new favorite bean to our menu!!

The proof is in the picture. Billieanne....actually eating something green. I love my beautiful daughters.

Jumbled-laya otherwise known as OOPS!

I set out tonight to make another batch of jambalaya.  I ended up committing "cook's homicide" when I did not check and make sure I actually had ALL the mandatory ingredients.  UGH.  I know better than that.  What follows below is an account of my maniacal recipe mangling, otherwise known as tonight's dinner.

It started out all good.  Here are my boneless, skinless chicken thighs frying in my large pan.  I sprinkled them liberally with Soul Seasoning and let them cook until done.  While they were cooking I chopped four small to medium yellow onions and two green peppers.  I did a large rough chop, not small dice.  It is important (I don't know, it sounded good!).

After the chicken was done (I forgot to tell you I fryed them in a little bit of vegetable oil) I put it aside on a plate with paper towels on it.  I drained away most of the left over oil but left a smidge to saute my veggies.
I only sauted them until just tender, I wanted them to retain some of their texture.  Next I sliced my package of Andouille sausage and microwaved it for 30 seconds.  After the nuke cycle I added the sausage to the peppers and onions.  I added the six cups of chicken stock and the bay leaf.

And here my friends, is where my recipe ran OFF THE RAILS!!!!  As I started to slice my mushrooms I suddenly realized my rice was MISSING.  Good gravy! I thought I had an entire package and it was gone!

I did what an self respecting cook would do....I PANICKED!  I called my daughters into the kitchen because they are taller than me.  I wanted them to check up in the cabinets where Miss Shorty could not see.  No luck.  Next I called my son (who was not home, I called his friend's cell phone to find him).  He was like...NO. I don't know.

Of course, next, I pouted.  Fumed.  Paced.  Then my husband said, "just use pasta".  WHAT? Pasta in my jambalaya??? PFFTT....

Since the recipe was already wrong I decided to just add other stuff.  I added a can of drained and rinsed pinto beans.  I added some chopped green onion.  Then I paced some more.  What on earth could I add?  I did not have any rice.  I started looking at my pasta but I only had angel hair and I just knew it would turn to mush.  That is when I saw it.  I had two bags of Lipton Creamy Chicken Noodles.  They are flat noodles and are rather sturdy.  So I dumped both bags with their seasoning in.

Well....it actually turned out pretty well.  I like the rough chopped mushrooms and onions.  I like the addition of the pintos.  Even the noodles work.  So, I have some new weird creation.  And the family is fed.  Mission accomplished.
